I fell in love with this soup at Christmas this year. Josh’s Aunt Carol made this soup along with Chili for all of us on Christmas Eve for dinner. The recipe came from her daughter-in-law’s mother in Lindsborg, KS. I substituted lower-calorie ingredients, but it turned out just as well. It’s very good!
Triple Flavor Wild Rice Soup Makes 6 servings – 7 WW Points each
Ingredients 6 oz. box wild rice (Uncle Ben’s) 8 slices turkey bacon, cut up 1 medium onion (chopped – optional) 6 c. skim milk 2 (10 ¾ oz) cans condensed cream of potato soup 8 oz. reduced fat shredded cheese
Preparation Cook rice according to box.
In skillet cook bacon & onion till bacon is crisp and onion is tender.
In large saucepan combine rice, bacon & onions, milk, soups and cheese.
Heat over low heat until cheese melts and mixture is heated through.
