Texas-Style Casserole

This was interesting.  I misread some of the ingredients, so we ended up with something slightly different than what we were supposed to end up with, but it worked in the long run and turned out alright.

Texas-Style Casserole

Ingredients

2 cups frozen hash brown potatoes 1 cup frozen corn 8 oz. turkey smoked sausage, cut into coins 1 cup skim milk 2 large eggs 1/4 tsp. salt 1/4 tsp. pepper 3/4 cup shredded reduced fat cheddar cheese

Preparation

Preheat oven to 350 degrees.  Coat a 9-in square glass baking dish with cooking spray.

Place potatoes and then vegetables in baking dish, top with turkey sausage.

In a small bowl, beat together milk, eggs, salt and pepper.  Pour over sausage and then sprinkle with cheese.

Bake until casserole is hot and cheese is browned, about 45 minutes.
