Low-Calorie Banana Bread


I have to admit, I was a little bit skeptical when I saw this recipe.  How could this possibly taste good and be so low in calories?  Well, I was wrong.  Granted, it’s not the best banana bread I’ve ever had.  You can definitely tell that it’s made with Splenda and it’s got a powerful sweetness to it, but if you’re alright with Splenda, you should be fine with this recipe.  It definitely hits the craving for banana bread and will go into the permanent recipe collection.  I doubled the recipe, but the recipe below is the original.

Low-Calorie Banana Bread

Makes 2 servings – 250 calories each

Ingredients 1 mashed banana 1 Tablespoon of Melted Butter or Margarine 1 teaspoon of Rum Extract 1 cup of Splenda Dash of Salt 1 teaspoon of baking powder 1 large egg 2 Tablespoons of Skimmed Milk 3/4 cup of White Flour

Preparation Preheat oven to 350° and spray two mini-baking pans with non-stick cooking spray. 

Place all ingredients except flour in a medium-sized mixing bowl and gently mix by hand until smooth. 

Add the flour to the bowl of wet ingredients.

Cook about 20 minutes – or until golden brown.
