This was a different Chicken & Noodles than I am used to but it was different in a VERY good way. I love veggies in my chicken & noodles and this had a lot of celery and carrots to make things taste awesome. I could eat this stuff forever. . . and a serving is only 4 WW Points!!! Yummy!
Creamy Chicken & Noodles Makes 4 servings – 4 WW Points each
Ingredients 8 c. reduced sodium chicken broth 12 oz. chicken breast 1 c. onion, chopped 4 stalks celery, chopped 4 carrots, sliced 1 tsp. thyme 1 tsp. parsley 2 tsp poultry seasoning 1 c. egg noodles, uncooked ½ c. flour ½ c. 1% low-fat milk
Preparation Pour chicken broth into stockpot. Add chicken breast, celery, onion and carrot. Season with poultry seasoning, thyme, sage, salt and pepper. Bring to a boil, then reduce heat to simmer. Cook until breast is cooked (about 20 minutes).
Remove chicken from pot. Bring heat back up to med-high and add egg noodles and cook. Meanwhile cut chicken breast up into bite sized pieces and add back to pot. Combine flour and milk, mix well.
When noodles are cooked, add flour/milk to chicken mixture and stir until thickened. Reduce heat. Add parsley.
