Baked Chimichangas

I don’t really know what a chimichanga is supposed to look like, but these were great.  The combination of the beans, green chilies and meat was just right and we have leftovers in the freezer for sometime in the future.  This is definitely a WW recipe that I would recommend!

Baked Chimichangas Makes 8 servings – 4 WW Points each

Ingredients 1 – 16 oz can Fat Free Refried Beans 2 T. chili powder 2 tsp salt 1 – 4 oz can chopped green chilies 1 pound extra lean ground beef 1 can dived tomatoes 8 low calorie tortillas Optional – low fat cheese, fat free sour cream & salsa (add points)

Preparation Preheat oven to 350 degrees.  Spray a 9×13 pan with non-stick spray.

Wrap tortillas completely in foil and warm in oven for 8 minutes.

While tortillas are warming, brown ground beef in skillet.  Once it is cooked through, add all remaining ingredients and cook until heated through. 

Fill each tortilla with 1/8 of the filling, fold in ends and roll.  Place each filled tortilla in the prepared dish. 

Bake for 25 minutes.
